Sinigang: Does This Sour Soup Spoil Easily?

One of the best things to eat on a rainy day is sinigang, a sour soup made of tamarind juice and either fish, pork or shrimp. But if you have leftovers of this soup, you might want to know how long it will last in the fridge.

As a general rule, sinigag will last 2-3 days in the fridge. While sinigang doesn’t spoil easily, it is also not a dish that will keep in the fridge for more than a few days. Sinigang is spoiled if it has bubbles and has a distinct acrid smell.

Ihave done this for many years, where I would make a large batch of sinigang and then forget to put it in the fridge when I go to bed. The next day, I will pack a bit to bring to work, and then put the rest in the fridge. I could still eat the rest the day after with no issues.

That is to say, if you are preparing the food for yourself and your own family, and you know how sensitive everyone is to food, then you can definitely keep sinigang in the fridge for up to 5 days before reheating and eating this dish. However, if you are serving this at a gathering or even for other people, I would caution against doing this, as you don’t know how sensitive people’s stomachs are.

At the same time, when you do decide to warm up your sinigang, make sure you warm it really well on stovetop and let it boil for a few minutes before turning off the stove and serving the dish.

With all that said, here are a few things that you can do to help it last even longer:

  • First, make sure to store sinigang in the fridge as soon as it has cooled down.
  • If you leave it out at room temperature, it will spoil more quickly. In addition, try to eat sinigang within a few days of making it.
  • If you notice any bubbles or an acrid smell, it’s best to throw it out.

Do you have to refrigerate sinigang?

So, do you have to refrigerate sinigang? The answer is, it depends. There are many factors that will help you determine if you should take more precautions in serving, storing and warming up your food.

These factors are:

  • Did you cook the food yourself? Will you be serving it to the public, or only to yourself and your family?
  • Did you use a serving spoon when serving the food? Did saliva touch the food when you were eating?
  • Do you have a sensitive stomach or a fairly strong/tolerant one?
  • Do you live in a warm or cool climate?

If you determined that you won’t be serving it to the general public and that you have a fairly tolerant stomach, truthfully, you can even leave out sinigang overnight and it will still be good for the next day. And, if you’re planning on eating it within the same day, then refrigeration isn’t necessarily required, unless you live in a hot climate.

However, if you want to keep the sinigang for a few days, then refrigerating it is a must. This will help to extend its shelf life and prevent the growth of bacteria.

How to store sinigang in the fridge?
