  • Beat 2 pieces of egg.
  • Once beaten, dip the eggplant in the scrambled egg.
  • Turn down stovetop range to medium heat. Heat up a pan and add oil
  • Once ready, add the eggplant dipped in egg to the pan.
  • Once first side is brown, turn the omelette over.
  • Turn off the heat once ready and then serve.
